Allergy Friendly Chicken Waldorf Sandwich

Waldorf is a type of salad typically made with meat, fruits (such as apple, grapes) and walnuts. Here I have omitted the nuts and used an allergen free mayo to make the Allergy Friendly Chicken Waldorf Sandwich. I use it as a filling between slices gluten free bread to make a sandwich.

I use the Red Delicious Apple with the peel and both red and green grapes, to give it a sweet and crispy texture and color. It is ideal for school lunch or an after school snack.

For a long time I have been searching for a mayonnaise that is free of allergens that my kids cant eat. Usually the mayo available on the market will contain either one - eggs or vinegar or both. I have to usually make it at home or give it up altogether as its usually a disaster when made at home :).

So how did I end up making these sandwiches which are allergy friendly? Thanks to my cousins, they found this brand for me, when they made some food for us. This brand is both egg and vinegar free. The brand is Chippa May-O.

Ingredients

Adjust Servings:
1 cup cooked shredded chicken
1/2 cup green & red grapes (each), chopped
allergy friendly mayonnaise, as required
1/2 cup celery, thinly sliced
1 red apple, chopped
salt & pepper, to taste
1 green onion, sliced thinly
gluten free bread, as required

Boil the chicken with salt and pepper. Let it cool then shred.

Cook Notes

  • Adjust quantities according to your needs.
  • Leave out celery if you do not like.
  • Add 1/2 cup walnuts if you are not allergic to them.

Easy Cream Puffs

Easy Allergy Friendly Cream Puffs

These allergy friendly, gluten free and dairy free cream puffs are amazingly easy to make. Usually when I make these kind of baking goods they are a complete disaster, however, this one was very easy to make and turned out quite good for an allergy friendly version, if I say so myself. My kids helped me make these. They poured in the ingredients as I stirred and then made balls. Once the puffs cooled, they filled it with the icing too. I used Cake Mate Cupcake Icing, that comes in a spray can ready to be used, along with icing tips. This icing does not have any of the ingredients that my kids are allergic to. If you find that you can not use it, you can use whipped cream or icing of your own choice or use the puffs in a savory recipe.

1 cup water
1/4 teaspoon salt
1/2 cup dairy free butter
1 teaspoon sugar
1 cup gluten free flour
4 tablespoons water or dairy free milk
Topping
1 tablespoon sugar
Filling
1 can spray Cake Mate Cupcake Icing

Preheat the oven to 450o F.

In a medium saucepan combine the 1 cup water, butter, sugar and salt. Bring the mixture to boil, stirring occasionally with a wooden spoon.

Add the flour to the saucepan, stir. Keep stirring until the mixture pulls away from the side of saucepan. A ball should form around the spoon. Take it off the burner and let it cool slightly.

Add a tablespoon of water at a time and stir to mix after each one.

Cream Puff balls ready to be baked on a baking tray
Scoop a tablespoon of dough, shape it into a ball roughly (be careful the dough will be hot). Place it onto a baking tray, repeat until all the dough is used up. Sprinkle sugar on top.

Bake for 15 minutes. Then reduce the heat to 350o F. Bake further for 25 more minutes. Be careful not to overbake.

Cream Puffs with icing as filling
Cool the puffs for 15 minutes. Then use a knife to cut the top off of each puff. Fill each puff with a squirt of the icing. Place the top back. Serve and enjoy.

Variations

  • Add a teaspoon of jam before the icing in each puff.
  • Use lemon curd or chocolate pudding as a filling.

Quick, Easy and Dairy Free Swirled Frosting

Don't feel like choosing which frosting to use on your cupcakes? Make a swirled frosting, this will give you two flavors in one frosting. It is very easy to do and you can wow everybody.

You will need two frostings, any flavor you like or use my quick and easy dairy free Chocolate Frosting and Vanilla Frosting.

After you have made the frostings, grab a piping bag and piping tip of your choice. Then follow the steps below!

What you will need

2 different flavored frosting

Direction

Spoon one frosting into one side of the bottle or piping bag. Fill the second side with the second frosting. Place the tip as required. Start decorating!

Cook Notes

  • The two sides in the bottle or piping bag do not have to be perfect.
  • Sometimes one of the frostings might not be at the tip, so you will only get one color. You might need to frost one or two cupcakes before you get a perfect two shaded swirl.

Spicy Chickpea Salad (Chana Chaat)

Spicy Chickpea Salad in a bowl

Pakistani Spicy Chickpea Salad or Chana Chaat as it is called, is allergy friendly and delicious. Usually served along with tea as a tea snack. It can also be served as a side with dinner or eaten all on its own.

There are a lot of variations to this dish but as usual I have adapted it to our dietary requirements. This dish requires minimum cooking and comes together in less than an hour.

The two ingredients that are crucial to this dish are:

  • 🧂 Chaat Masala: It is a mixture of different spices blended together. The taste is tangy and spicy. The masala mixture is quite common in Pakistani cooking. Usually sprinkled over dishes as a finishing touch.
  • 🧂 Imli as it is called in Urdu, is tamarind. This is what gives this dish the tang. For this recipe I make a pulp by mixing some raw tamarind with water.

These two ingredients make a world of difference on how your salad will taste. You can make both at home or use store bought. In this recipe I use store bought. Both of these are available at any Indian stores or in the international section of the grocery stores.

Take a mixing bowl. Add chickpeas, all the vegetables, chaat masala and tamarind pulp (you can add more of masala and pulp as needed to suit your taste). Mix and enjoy.

Cook Notes

  • For homemade tamarind pulp: soak about 1/2 pack of tamarind in water. Water should be just enough to make a thick paste
  • When using store bought tamarind pulp, if you are going to add more than 1 teaspoon of the pulp, be careful as it can turn the chaat black. It does not affect the taste though.

I know corn is one of the top 8 allergens that people are allergic to. Luckily, my kids are not allergic to corn and it is one of their favorite vegetable.

I was craving corn on the cob but since I cannot grill, I used the next best alternative which is baking the corn. When I did a search on google for baked corn recipes, a ton of recipes came up.

I adopted the different recipes to suit our allergies. I have used olive oil instead of butter and kept it simple with just salt and pepper.

So the next time, in the middle of the winter when it is cold outside, snowing and you are craving for corn on the cob, give this recipe a try. Super easy, juicy and sweet.

Allergy Friendly Smoked Gouda Chicken

Egg Free and Dairy Free Smoked Gouda Chicken

This Allergy Friendly Smoked Gouda Chicken is inspired by the classic Chicken Parmesan. Serve it with your favorite side or check out allergy friendly sides from this blog.

So far I have not seen any dairy free Parmesan which is suitable for our family. I usually make Chicken Parmesan with Daiya cheese shreds which are dairy free.

Recently Daiya introduced new flavors to their line of cheeses so I used my daughter's new favorite flavor, which is Daiya's Smoked Gouda Slices. Gouda is pronounces as `"How-Da" and is named after a city in Netherlands. The taste is mild with a little smokiness.

To make this dish allergy friendly I substituted the following ingredients

Dairy Free Substitutes

  • I have made it allergy friendly by using coconut milk for dredging.
  • For the dairy free cheese, I use the Smoked Gouda Slices from Daiya.


Gluten Free Substitutes

  • For the flour, I used chickpea flour but any gluten free flour can be used.

8 boneless skinless chicken breasts pounded to 1/2" thick
1/2 cup dairy free milk
2 cups any gluten free flour or chickpea flour
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon thyme
oil, as needed (for frying)
Baking
1 cup favorite pasta sauce
8 Smoked Gouda Slices (dairy free from Daiya)

Heat oil for shallow frying in a non stick pan on medium-high heat. Meanwhile, add the two tablespoon of olive oil to the milk and whisk to mix.
