Allergy Friendly Chicken Kiev

Allergy Friendly Chicken Kiev with homemade wedges

This month is Food Allergy and Celiac Disease Awareness month. So here is how I raise awareness by turning a classic dish into an allergy friendly one - Allergy Friendly Chicken Kiev. Serve this dish with homemade potato wedges and a salad.

I did make a little addition to the dish by adding a little dairy free cheese, just because cheese makes everything good. For Chicken Kiev even though the recipe is easy but the process is quite long. You have to put the chicken in the refrigerator in between each step.

It is not that hard to turn any dish into a free from allergens recipe. Even more so today as all these alternatives are available on the market, such as dairy free cheese, milk and gluten free flour etc. You just have to think a little on how and what can you substitute your allergens with.

Substitutions made for this recipe

  • 🥚 Egg Free: Use Dairy free milk instead of an egg
  • 🌾 Gluten Free: Use gluten free all purpose flour or gluten free bread crumbs, which ever you like.
  • 🥛 Dairy Free: Use dairy free butter and cheese for the filling.

Ingredients

Adjust Servings:
herbed butter
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped (see cook's note)
6 tablespoons dairy free butter or coconut oil
Batter
1 cup gluten free all purpose flour
dairy free milk, as required
Chicken
4 skinless, boneless chicken breast, halved and pounded to desired thickness
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon red chili flakes (optional)
dairy free cheese (optional)
oil, for frying as needed

Wash hands with soap and water for 20 seconds.

Mix all ingredients with butter and wrap the butter mixture in plastic wrap and refrigerate until cold, at least 15 minutes.

logo for handwashingSeason chicken breasts with salt, pepper and chili flakes. Now place a 1/4 inch piece of the butter mixture in the middle. Add a piece of dairy free cheese. Now roll the chicken into a ball shape, making sure all the sides are closed. Freeze for 30 minutes. Wash hands with soap and water for 20 seconds after touching raw meat.

logo for handwashingPour milk in a bowl. Then place the flour in a separate plate, mix in salt and pepper. Now dip a chicken ball in the milk then dredge in the flour, repeat with all the pieces and refrigerate for 15 minutes again. Wash hands with soap and water for 20 seconds after touching raw meat.

Now heat oil on medium heat, then fry the chicken pieces. Make sure the internal temperature reaches 165° F on a food thermometer (see cook's note). Let it rest 5 minutes before serving.

Cook Notes

  • You can use 1 teaspoon dried parsley, if you do not have fresh one.
  • If you think the chicken is not cooked enough, bake it in the oven for 30 minutes.
