Chicken Zaytoon (Olive) Rice
Chicken Zaytoon Rice is a rice dish with chicken and olives. It is very simple and easy to put together. Now you maybe wondering what is Zaytoon. Well, Zaytoon is an Arabic word for olives.
Some fun facts about olives
- Olive is a fruit and not a vegetable
- It's flowers are white in color
- The olive tree can live up to 2000 years!
I have used basmati rice for this recipe but you can use any rice you have at hand. Use any type of olives you like, we love the green ones.

Ingredients

1 lb chicken | |
2 tablespoons garlic, chopped | |
2 tomatoes, chopped | |
1 onion, chopped | |
1 teaspoon black pepper powder | |
1/2 cup olives | |
2 tablespoons lemon juice | |
5 green chilies | |
2 tablespoons olive oil | |
salt |

Now add ginger garlic paste, saute for a minute. Then add the chicken, tomatoes and all spices. Cover and cook until the chicken`s internal temperature reaches 165° F on food thermometer. Add a little water if required.

Once the chicken is done add the olives, lemon juice and chilies. Then top it with rice, cover and let it steam for 10 to 15 mins on low heat.

Cook Notes
- Garnish with your favorite seeds or green onion.
- Add more tomatoes as required, for more sauce.
