Allergy Friendly Chocolate Chip Pancakes
Allergy Friendly Pancakes are a must for weekend breakfast in our home. Mainly because there is no other breakfast option that seems like overly processed food and which we can make at home.
My kids love the addition of chocolate chips to the batter. However they don't like maple syrup on the pancakes so we don't use it. Less sugar, right?
These Allergy Friendly Chocolate Chip Pancakes are:
- 🥞 Egg free
- 🥞 Tree nut free
- 🥞 Dairy free
- 🥞 Peanut free
- 🥞 Soy Free
The store bought brand that I previously used for the pancake mix, has been discontinued. Other well known brands that I used did not give me the same texture. They turned out to be a gooey sticky mess while cooking, so I stopped making the pancakes for a while as the kids did not want to eat them either.
Just recently, while in grocery shopping I came across a gluten free flour which was new for me so I decided to give it a try. Guess what? the pancakes came out perfect even though I had to make the pancakes from scratch.
I made these pancakes with vegetable oil once and once with coconut oil. My kids seemed to prefer the texture with the coconut oil. My son refused to eat the ones with vegetable oil, even though the batter was thicker with the coconut oil. So use your own choice of fat that you like or even dairy free butter.

Ingredients
2 1/2 cups gluten free flour | |
1 1/2 tablespoons baking powder | |
1 tablespoon honey (see cook's note) | |
1/2 teaspoon salt | |
2 cups dairy free milk | |
1/4 cup coconut oil (see cook's note) | |
1 teaspoon vanilla | |
2 tablespoon water | |
dairy free chocolate chips, as required |

In a large bowl, mix together all ingredients. (see cook's note)

Gently flip pancake with a spatula and cook until second side is golden brown. Remove from pan, and serve
immediately with toppings of choice.

Cook Notes
- Substitute honey with sugar to make the pancakes vegan.
- Substitute coconut oil with any other vegetable oil or dairy free butter.
- Batter will be thicker if using coconut oil but turns out great.
