Homemade Dairy Free Peppermint Ice cream

In this Dairy Free Peppermint Soft Serve Ice Cream recipe learn how to make a creamy soft serve without an ice cream maker. This recipe is easy and dairy free.


How to make it dairy free.

The first time I made this recipe, I made it with dairy free milk. That recipe turned out to be more of a sorbet than an ice cream. Second time I used all dairy free cream, which changed the taste a little bit.

I suggest using dairy free milk and dairy free cream together, this would give the best result. You can even use dairy free coffee creamers.


Making the ice cream

  • If you have an icecream maker than just use it according to manufacturing's instructions.
  • Don't have an ice cream maker? read below.


Making it soft serve

After the ice cream has been frozen overnight, you will take it out of the freezer chop it into big chunks and process in the food chopper until smooth, then refreeze again. You have to repeat this process 3/4 times to get the desired soft serve consistency.


Flavoring

  • Candy Cane: Blend a candy cane with other ingredients, like I did. The flavor from the candy cane was enough to flavour the ice cream.
  • Peppermint Essence: You can use the essence for a stronger flavour.
  • Do not like Candy Cane? Use any other flavor essence/fruits. This can be a great base to many other flavors.

Serving Suggestions

To serve the ice cream chop a candy cane and sprinkle on top before serving. My daughter enjoyed it with the Dairy Free Homemade White Chocolate Peppermint Bark that I posted earlier.

1 cup dairy free milk
1 cup dairy free cream (or dairy free coffee creamer/more milk)
1 tablespoon cornstarch
1/4 cup maple syrup (or other liquid sweetener of choice)
1 large candy cane or peppermint essence
2 candy canes, crushed

Wash hands with soap and water for 20 seconds.

Place all the ingredients except the two extra candy canes in a blender and blend until smooth. If you have ice cream maker continue to make the ice cream according to the manufacturer's instruction. If no ice cream maker then continue to step 3.

Empty the liquid in a freezer safe container. Crush the two candy canes and fold them in. Cover with a lid and freeze for 6 hours or overnight.

After the 6 hours, take out the ice cream, let it soften a little bit. Then break into big chinks and place in a food processor and chop further until smooth. Then pour the ice cream mixture back in the container, cover and freeze again. Repeat this step 3 to 4 times every hour, for soft serve ice cream.

Serve with some crushed candy canes sprinkled on top.

Cook Notes

  • Corn Free: Use another starch in place of the corn.
  • For Flavor: Use peppermint essence or candy cane.
  • If no ice cream maker: to make soft serve the food chopper step is important, repeat it 3/4 times.
