Allergy Friendly Chicken McArabia
McArabia is McDonald's grilled chicken sandwich made with pita bread. It is available in different countries under different names, for example Pakistan, Singapore, Greece etc. The first time I made the copycat recipe, it was a total hit. At the time I just used the recipe as is, so my kids did not eat it because of all the allergens it contained. This time around I decided to make it allergy friendly.
McArabia patty is made with chicken mince, spices, egg and a bread slice. Then for sauce it uses mayonnaise and vinegar and the patty is than sandwiched between a pita bread. Here are the substitutions I made for the Allergy Friendly McArabia, to make it gluten free, vinegar free and egg free.
- I substituted the bread slice that goes in the marinade with a 2-4 tbsp of gluten free flour
- Left out the egg altogether.
- For the pita bread, I used a store bought gluten free version.
- The sauce is made with mayonnaise and vinegar, both of which we cannot have so I completely omitted out the sauce (see cook notes)
Allergy Frienldly McArabia pairs up well with pickles, here is a homemade pickles recipe, I made recently. They can be served with fries or my homemade wedges.

1 lb chicken mince | |
4 tablespoons gluten free flour | |
1 teaspoon salt | |
1 teaspoon black pepper | |
1 teaspoon garlic and ginger paste | |
2 tablespoons water or dairy free milk | |
1/2 teaspoon paprika powder | |
1 teaspoon cumin or coal (see cook notes) | |
gluten free pita, as required | |
tomato, lettuce and onions, sliced, for garnish (as required) |

Cook Notes
- If you do not have coal, use cumin to give it a smokey flavoror use both if you like.
- Use a grill pan if you do not have a grill.
- Use a gluten free bun instead of pita, for variation.
- If you can have mayonnaise, then mix 4 tbsp. mayonnaise with Few drops of vinegar and add garlic to taste. Use as a topping.
