Gluten and Nut Free Snowball Cookies
The Snow Ball Cookies - gluten, dairy and nut free are a fantastic holiday cookie. A rich, buttery shortbread cookie that’s studded with chopped sunflower seeds and rolled in powdered sugar.
These are a perfect addition to your allergy friendly holiday cookie list. They are super easy to make and only take a few ingredients.
To make these cookies, you add all the ingredients except the powdered sugar in a bowl. The sunflower seeds should be roughly chopped. If the seeds are small then you do not need to chop.
These cookies should not be made too big, you only want about 1 tablespoon of dough per cookie. Also they should be shaped into rounds and not flatten out.
These cookies only need to be bake for about 15 minutes. Once they are out of the oven, let the cookies cool for about 5 minutes and then roll them in powdered sugar. Once they have cooled completely, roll the cookies one more time in the powdered sugar.

- 🍪 Tree Nuts: I used sunflower seeds but you can use any of your favorite seeds. Use dried cranberries or chocolate chips. You can simply leave out them out too

1 cup gluten free all-purpose flour | |
1 cup sunflower seeds (see cook`s note) | |
1/4 cup granulated sugar | |
1/8 teaspoon salt | |
1 teaspoon pure vanilla extract | |
1/2 cup dairy free butter substitute, softened | |

Line a large baking sheet with parchment. In a large bowl, mix all the batter ingredients and using your hands, combine everything until mixture resembles a coarse meal.

Form dough into small balls and place on prepared baking sheet. (see cook's note)

Take the cookies out of the oven and let them cool for 5 minutes. They should be still warm but cool enough to touch, roll cookies in powdered sugar. When the cookies are cooled completely, dust in powdered sugar again.

Cook Notes
- The batter will be super crumbly, press into the palm of your hands firmly to shape into balls
- Corn Free: if you are unable to use the powdered sugar because of cornstarch, try grinding coarse sugar in a coffee grinder and use that for coating.
