Allergy Friendly Cream of Mushroom Soup

This is a quick and easy allergy friendly Cream of Mushroom Soup recipe. It can be made in under half an hour and is gluten and dairy free.

Serve with toppings such as parsley and either Dairy and Gluten Free Cheese Croutons or Gluten Free Plain Croutons.


Making the recipe allergy friendly


  • 🥣 Dairy Free: I used dairy free cooking cream but if that is not available use any dairy free milk alternative.
  • 🥣 Gluten Free: This recipe uses all purpose gluten free flour as a thickener.


Soup Consistency

Depending on whether you use a dairy free cream or milk you might have to adjust the quantities of both the milk and gluten free flour to achieve the desired thickness. The gluten free flour takes a little longer to thicken then regular flour.


Serving the soup two ways


  • 🥣 Chunky: If you like pieces of mushrooms in the soup then serve the soup as is. Alternatively, you can use a potato masher to blend the soup a little and still leave some mushroom pieces chunky.
  • 🥣 Smooth: For as smoother consistency, cool the soup a little and then pkace in the blender and blend. For this recipe I blended the soup.


Leftovers


  • 🥣 This soup can be made ahead of time and storeed in an air-tight container in the refrigerator.
  • 🥣 Let the soup cool completely before placing it in a freezer-safe container and freezing it.
  • 🥣 Use as an alternative for cream of mushroom in recipes.

Ingredients

Adjust Servings:
2 tablespoons dairy free butter
1 cups cremini mushrooms
1 onion, chopped
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon dried thyme
1 teaspoon black pepper
4 cups chicken stock or plain water
4 tablespoons gluten free flour
1 cup dairy free cream
Toppings
1 tablespoon fresh or dried parsley
gluten free croutons, as required

Wash hands with soap and water for 20 seconds.

Melt butter in a pot on medium high heat. Then add garlic, mushrooms and onions, saute until tender.

Add the dairy free milk/cream and cook for a few minutes. Adjust the seasoning. For smooth soup, place it in a blender and blend to desired consistency.
