Quick and Easy Dairy Free Chocolate Frosting on a Cupcake

Don't you feel any recipe you make with chocolate, you can never go wrong, you don't have to worry how it is going to turn out just because chocolate makes everything better. Here is a very quick and easy to make dairy free chocolate frosting recipe.

It is similar to the vanilla frosting I made earlier, just with added cocoa. It's dairy free and can be made allergy friendly according to your allergies. I have used coconut oil and coconut milk but they can be substituted for any dairy free milk and butter alternatives.

Ingredients

Adjust Servings:
1 and 3/4 cups icing sugar
1/4 cups unsweetened natural cocoa powder
2 tablespoons coconut or any dairy free milk
1 teaspoon vanilla extract
1/2 cup coconut oil or any dairy free alternative, softened
pinch salt

  • Chocolate Frosting ingredients mixed
Add all ingredients in a bowl and mix with a whisk or electric mixer until peaks form.

Baked Corn on the Cob

I know corn is one of the top 8 allergens that people are allergic to. Luckily, my kids are not allergic to corn and it is one of their favorite vegetable.

I was craving corn on the cob but since I cannot grill, I used the next best alternative which is baking the corn. When I did a search on google for baked corn recipes, a ton of recipes came up.

I adopted the different recipes to suit our allergies. I have used olive oil instead of butter and kept it simple with just salt and pepper.

So the next time, in the middle of the winter when it is cold outside, snowing and you are craving for corn on the cob, give this recipe a try. Super easy, juicy and sweet.

2 corn ears
olive oil, as needed
salt & pepper, to taste
foil, to cover the corn

Preheat oven to 350 o F.

Remove the husks from the corn.

This is a very quick and easy to make dairy free vanilla frosting recipe. It can be made allergy friendly according to your allergies. I have used coconut oil and coconut milk but they can be substituted for any dairy free milk and butter alternatives.

12 years ago there were no allergy friendly frosting on the market. Since then I have been practicing how to make an edible vanilla frosting that my kids would like. I say edible because if you deal with any kind of substitutions in cooking you know it can end up as a disaster. I have finally made a frosting that behaves just like a frosting and is good in taste as well.

Combine it with my chocolate frosting to make swirl frosting.
