Allergy Friendly Smoked Gouda Chicken

Egg Free and Dairy Free Smoked Gouda Chicken

This Allergy Friendly Smoked Gouda Chicken is inspired by the classic Chicken Parmesan. Serve it with your favorite side or check out allergy friendly sides from this blog.

So far I have not seen any dairy free Parmesan which is suitable for our family. I usually make Chicken Parmesan with Daiya cheese shreds which are dairy free.

Recently Daiya introduced new flavors to their line of cheeses so I used my daughter's new favorite flavor, which is Daiya's Smoked Gouda Slices. Gouda is pronounces as `"How-Da" and is named after a city in Netherlands. The taste is mild with a little smokiness.

To make this dish allergy friendly I substituted the following ingredients

Dairy Free Substitutes

  • I have made it allergy friendly by using coconut milk for dredging.
  • For the dairy free cheese, I use the Smoked Gouda Slices from Daiya.


Gluten Free Substitutes

  • For the flour, I used chickpea flour but any gluten free flour can be used.

Ingredients

Adjust Servings:
Frying
8 boneless skinless chicken breasts pounded to 1/2" thick
1/2 cup dairy free milk
2 cups any gluten free flour or chickpea flour
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon thyme
oil, as needed (for frying)
Baking
1 cup favorite pasta sauce
8 Smoked Gouda Slices (dairy free from Daiya)

Preheat oven to 350 o F.

Pound your chicken to 1/2" thickness (see cook's notes), set aside

Add the flour and all the spices to a bowl. Make sure you can easily coat chicken.

mix olive oil with dairy free milk
Heat oil for shallow frying in a non stick pan on medium-high heat. Meanwhile, add the two tablespoon of olive oil to the milk and whisk to mix.

  • soaking chicken breast in olive oil/dairy free milk mixture
  • dredging chicken in gluten free/chickpea flour
Now place a piece of chicken in the oil/milk mixture. Then dredge it in the flour mixture.

Chicken fried until golden brown
Fry until golden brown on both sides. Repeat steps 5 & 6 until all the pieces are done.

Place all the chicken pieces in a baking dish. Now top with sauce and a half or full cheese slice.

Now place in the oven and bake until the chicken is cooked through and the cheese has melted.

Cook Notes

  • You can simply slice the chicken breast piece into half with a knife.
