Cauliflower Fried Rice

My husband has been bugging me for quite sometime that we should eat less rice but in an allergic household there is very limited choice of grains you can have, so often rice is the go to option. However, the other day I went grocery shopping and found a bag of Cauliflower Rice on display and I decided to try it to see how it tastes. I think it was pretty good tasting for a faux rice. I took the recipe on the bag as guideline and added my own steps to it.

Ingredients

Adjust Servings:
1 tsp olive oil
1/2 cup onion, diced
1/2 cup carrots, diced
6 cloves garlic, minced
2 1/2 cups Cauliflower Rice
1 tsp soy sauce
1 tsp lemon juice
salt and pepper to taste
1 tsp sesame oil

Heat 1 teaspoon olive oil on medium heat. Add minced garlic, cook until fragrant, do not brown

Now add carrots, onions, cabbage, cook for 2 minutes

Add soy sauce and lemon juice, season with salt and pepper. Cook for another 1 minute.

Sprinkle sesame oil. Cover and simmer for 5 minutes on low heat.

Cook Notes

  • Always adjust seasoning to your taste
  • simply just omit or use salt, if you are allergic to soy sauce
  • simply omit sesame oil if you are allergic
